Indian Spiced Spinach

Aromatic flavors and spices pump up boring spinach!


Ingredients


1 lb baby spinach

1 cup tomatoes, chopped

1 large onion

1/4 teaspoon cinnamon

1/4 teaspoon ground cardamom

1 teaspoon ground ginger

1/2 teaspoon chopped garlic

1/2 cup chopped tomato

1 tablespoon coriander powder

1/2 teaspoon paprika

1/2 teaspoon salt

Instructions


1.  Heat a large non-stick skillet. Add the tomatoes, garlic, onion and other spices and cook, stirring, until fragrant, about 5 minutes.


2.  Add water as needed to keep from sticking.


3.  Add spinach and cook until wilted.


4.  Season with salt and serve.
